Lost him at stockpot by Knorr. he's on record as saying pre made stock is 💩. I use it everyone normal uses it. Massive sell out.cnut.

There is no cream in carbonara
I didn’t cook the risotto. The risotto cooked itself. That was its choice to absorb the stock.
The italiens are going to tear him apart, for using heavy cream.
I mean obviously the whole Stock pot thing is BS, but i love that even if he does so much things non traditional its for a reason and that he mentioned it must taste good. I respect and love italian cuisine, its amazing and i have been to Italy a lot. An its not like every Dish there is perfect, i visited really good Restaurants were i was a bit disappointed and thought that my home cooked version, maybe slightly off tradition is better.

Shame he sold out so much to Knorr. An amazing chef and a brilliant mind. Im sure he never used a stock pot in his restaurant.

I started on one Know cube a day, just recreation. Before I knew it I was hooked. Hiding them in toilet, middle of the night, cold sweats...Be Careful. Use Bovril instead.

Do you think Marco talks to himself like this in the kitchen? I mean, in these videos, there's clearly no one else there. I know he's instructing the video viewers but who the heck is he talking to? He keeps looking up an addressing an invisible person.
People laugh at the idea of using stock pots but those things are pretty much msg, salt, sugar, and one or other spice. There's really nothing wrong with using them as a seasoning shortcut.

Why? A lot of people don't have access to guanciale, either because of the cost or availability. He's made these for people cooking at home in the most simple terms available. Regardless, it's obvious this isn't traditional carbonara.
He made a yummy dish, but he broke a couple of Carbonara cardinal rules. The chicken stock concentrate, olive oil, and use of cream violate the terms of the recipe. Using these added ingredients along with peas, garlic, thickener, butter, or meat (shrimp and chicken) make it a different dish. Sorry dude.
Cream is wrong in carbonara. Like mayo, the magic of the dish is in getting a creamy result without cream.

I made 20 different versions of carbonara and in my opinion classical roman recipe is the best. keep it simple it will be delicious, for pasta I agree, De Cecco is the best commercial pasta.
